Sautéed Shredded Brussels Sprouts
Brussels sprouts have a life outside of the overcooked mushy version that most people find unappealing. This recipe may help you convince yourself and others that cooked properly, they can be delicious.
SERVES 4
Ingredients:
1 pound Brussels sprouts
2 tablespoons olive oil
2 teaspoons balsamic vinegar
Salt and freshly ground black pepper

Instructions:
▪ Trim the stem ends from the Brussels sprouts, remove any brown leaves, and rinse under cool water. Slice them crosswise into thin strips. If you happen to own a food processor, this would be a gratifying use of its slicing disk.
▪ Heat the olive oil in a frying pan over medium heat. Add the Brussels sprouts and cook, stirring occasionally for about 5 minutes, until they soften and are just starting to brown. Add the balsamic vinegar, salt and pepper, toss and cook for about a minute.
