Mushroom Saute

For some of us, mushrooms sautéed in butter are an almost required accompaniment to grilled steak. The easiest ones to find are the cultivated button mushrooms. Also try cremini which look like a brown version of button mushrooms but have a deeper flavor.

 

SERVES 4

 

Ingredients:

8 ounces button or cremeni mushrooms

2 tablespoons butter

Salt and freshly ground black pepper

2 tablespoons chopped fresh parsley

Instructions:

▪ Trim off the ends of the mushroom stems and then clean the mushrooms. Without soaking them in water, because they will absorb a lot of water, you want to either use a damp paper towel to brush away any clinging dirt or very briefly hold each mushroom under running water while you gently rub the dirt off. Set them on paper towels to absorb moisture and if they are large either slice them lengthwise ¼ inch thick or cut them into quarters.

 

▪ Melt the butter in a frying pan over low heat. Add the mushrooms, salt and pepper, and cook stirring occasionally for about 5 minutes until they just start to brown. Remove from heat, sprinkle with parsley, toss and serve.
