Kale Chips

Kale Chips

 

Kale has been discovered. It was always there, lurking as a healthy vegetable, but it is now in the height of fashion, as are crispy kale chips. Go ahead and Google it.

 

SERVES as many people who will dip their hands into the bowl and will probably consume as much as you make. Consider making more than one batch.

 

Ingredients:

Fresh kale, washed, dried and broken into small pieces with tough stems        removed

Olive oil

Salt; sea salt or kosher salt are delicious if you have them

Red pepper flakes (optional)

Instructions: 

Preheat the oven to 275°.

 

Spread the kale out on a baking sheet, drizzle with olive oil, and toss to coat evenly.

 

Sprinkle with the salt, and red pepper flakes if you like spicy flavor.

 

Put in the oven and bake for 10 minutes. Turn the baking sheet 180° and bake for another 5 minutes. Check to see if they are crispy enough for your taste, and if not, continue to bake but check every couple of minutes to make sure you don’t overbake and burn them.
