Herbed Thin Sliced Potatoes

Easy and elegant, these thin sliced potatoes are a delectable accompaniment to roasted meat, chicken or fish and can be cooked together in the oven. They have ingredients in common with Herbed Roast Potatoes but the difference is in the way they are cut and the resulting crispy texture.

 

 

SERVES 4

 

Ingredients:

1½ pounds red potatoes, scrubbed and cut into ⅛ inch slices

Olive oil

Salt and freshly ground black pepper

Dried thyme

Instructions: 

▪ Preheat the oven to 375° F.

 

▪ Put a tablespoon of olive oil in a 7 by 11-inch baking dish and swirl it around to cover the bottom.

 

▪ Arrange a third of the potatoes slices, overlapping them just slightly, to cover the bottom of the baking dish in a single layer. Drizzle with olive oil and sprinkle with salt, pepper and thyme. Repeat to make a total of three layers.

 

▪ Bake in the oven for 50 to 60 minutes, until the potatoes are cooked through and have started to get brown and crispy.
