Glazed Sweet Potatoes

This is very simple to prepare and you don’t have to wait for Thanksgiving to enjoy it. I realize some of you may insist on including marshmallows so if that’s the case, sprinkle the potatoes with about a cup of miniature marshmallows after you add the butter and brown sugar and omit the cayenne pepper.

 

SERVES 4

 


Ingredients:

4 medium sweet potatoes

1 tablespoon olive oil

Salt and freshly ground black pepper

1 tablespoon butter

1 tablespoon brown sugar

A pinch of cayenne pepper

Instructions: 

▪ Preheat oven to 400° F. Peel the potatoes, cut them in half lengthwise, and then slice them crosswise about ½ inch thick.

 

▪ Arrange the potatoes in a baking dish in one layer. Add the olive oil, salt and pepper, and toss to coat evenly.

 

▪ Put the pan in the oven and bake for 20 to 25 minutes. Check to see if they are soft by piercing with the tip of a paring knife, which should glide in easily.

 

▪ Cut the butter into pea-sized pieces and strew them over the potatoes. Sprinkle the brown sugar and the cayenne pepper over the potatoes. Bake for another 8 to 10 minutes. Transfer the potatoes to a serving dish.
