Baked Zucchini and Tomatoes

This is so easy to prepare and adds a nice complex array of flavor and texture to your meal.

 

SERVES 4

 

Ingredients:

2 tablespoons olive oil

1 onion, sliced

1 garlic clove, chopped

2 zucchini, sliced into ½ inch thick pieces

1 cup of cherry tomatoes, cut into halves

1 teaspoon dried basil or 2 teaspoons chopped fresh basil leaves

Salt and freshly ground black pepper

2 tablespoons grated Parmesan cheese

Instructions: 

▪ Preheat the oven to 350° F.

 

▪ Spread 1 tablespoon of the olive oil over the bottom of an 8-inch square or similar size baking dish. Add the onion and garlic and distribute evenly over the bottom of the dish.

 

▪ Add the zucchini and tomatoes on top of the onions and garlic. Sprinkle with the thyme, salt and pepper, Parmesan cheese, and then drizzle the remaining tablespoon of olive oil over everything.

 

▪ Bake for about 25 minutes.
