French Toast

French Toast

The French name for this is Pain Perdu, or Lost Bread, and it’s served as a dessert. Lost bread probably refers to old bread that doesn’t have much use, and bread that is getting stale is the perfect vehicle for French Toast. It doesn’t have to be ordinary bread, so try all kinds of different breads for this. Grain bread, slices of French bread and egg bread all make delicious French Toast. The recipe assumes 1 egg and 2 slices of loaf size bread for each serving, so adjust from that.

 

You’ll want to make up a mixture ahead of time of 1 part cinnamon and 3 parts sugar that you can keep indefinitely in a covered jar to use for French Toast or sprinkle on  buttered toast.

 

SERVES 4

 

Ingredients:

4 eggs

2 tablespoons milk

¼ teaspoon cinnamon and sugar mixture

1 tablespoon butter or margarine for greasing the pan

8 slices of bread

Butter

Jam

Maple syrup

Confectioners’ sugar

Instructions:

Crack the eggs into a pie pan or shallow bowl wide enough to hold a bread slice. Beat the eggs until whites and yolks are evenly combined, then add the milk and cinnamon and stir to blend.

 

Melt the butter or margarine in a frying pan or on a griddle on medium heat.

 

Just before you are ready to start cooking dip each piece of bread in the egg mixture and place in the pan. Cook a few minutes until the bottom side starts to brown and the egg is set. Turn and cook the other side the same way.
